I love me a good muffin. I mean, who doesn’t love a fresh baked muffin? Especially one that's filled with fresh, juicy blueberries. For starters, the smell of muffins baking in the house is intoxicating. And then biting into one of these muffins, fresh from the oven, is just heaven. I love using fresh blueberries as often as I can, especially locally grown, but frozen will do the job as well.

It has been such a busy few weeks, I feel like I've not been around much. Between a trip to Kansas, a busy work schedule, and the holiday weekend, it's been go, go, go! Speaking of the holiday weekend, I hope you had a wonderful 4th of July! Ours was pretty low key - my oldest came home for the long weekend so I got to spend time with both of my boys. My parents came over on the 4th as well and we had a delicious cookout filled with cheese stuffed burgers, my mom's famous potato salad, baked beans, and potato chips and dip. Isn't that the most traditional Americana menu ever? HA!

I've been having a blast in my kitchen eating and baking all the blueberries lately, and today I'm sharing this gorgeous Blueberry Galette.

I absolutely adore blueberries. Do you love blueberries? I hope so, because I've got a few new blueberry recipes up my sleeve that I'll be sharing with you over the next couple of weeks! I'm a sucker for those blue and purple gems. So soft and sweet, and perfect to eat in so many ways. My friends at Wish Farms sent me over some of their fresh blueberries and I've been having way too much fun baking up some yummy treats. Plus, I've been eating them by the handful. I can't help myself, they're just too good!

Friends, I've been craving muffins like crazy lately. I don't know why, but I've just really been in the mood for muffins morning, noon, and night. I've been loading up on fresh fruit lately, and had more berries in the frig than I knew what to do with. I love them on top of yogurt or in salads, even eating them by the handful, but I love to bake with them as well. With a big bowl of fresh blueberries staring right at my face, I decided to whip  up some bars. Not just any bars though, deliciously sweet Blueberry Crumble Bars.

These bars are extra special because the crust and the crumble topping are made with Great Grains Blueberry Morning cereal. You see, I don't just eat my cereal for breakfast, I eat it anytime! There is so much that can be made with cereal, not just eating it with a spoon. I think you can enjoy it anytime, anywhere, in many ways.

Warm weather has finally arrived in Michigan and it feels like summer. Although it's not technically summer yet, Memorial Day is the kick off to the season in my house. Now starts the BBQ's, potlucks, pool parties and family reunions. Some of my favorite summer events.

With those parties comes food, which means we're usually bringing a dish along with us when we visit family and friends. There are so many delicious dishes to bring, but of course I love to bring dessert. And this simple Blueberry Slab Pie is my new favorite.

I love a good salad, especially this time of year when fresh fruits and veggies are becoming abundant. Blueberries are a favorite around my house, whether baked into a dessert, on top of a yogurt parfait, or just eaten by the handful, the kids and I sure do go through a lot of them! 

I eat salads often but am always trying to change things up a bit so they don't get boring. Adding fresh fruit is a great way to perk up your salad and give it tons of flavor. This Blueberry & Toasted Pecan Mixed Greens Salad with Orange Vinaigrette has quickly become one of my new favorite salads, and I'm pretty sure I ate it 5 days in a row for lunch! You get a crunch from the toasted pecans, a little salty bite from the feta, a sweetness from the blueberries, and then there's the vinaigrette. Oh yes, this orange vinaigrette is amazing! I can see it being a staple in my frig all year long.

I'm back on my breakfast kick again, but this time it's all about pancakes! It's no secret I love pancakes, and on the weekends I love making a batch of homemade pancakes {or waffles} for me and the boys. I usually make a double batch of whatever it is, then freeze the extra for the week ahead. There's nothing like having a homemade pancake or waffle during the week before work or school. It totally beats the ones from a box!

These Blueberry Buckwheat Pancakes are light, fluffy, and deliciously healthy. Buckwheat flour is a good source of protein and calcium, and it contains a significant amount of fiber. It has a nice nutty flavor which is perfect in these pancakes. I also made these pancakes lactose free.

One of my goals for 2016 is to up my breakfast game. It's not the weekends I worry about, it's the weekdays. Too often I grab a granola bar or cup of yogurt to go with my cup of coffee and call it good. Now there's nothing wrong with a bar or yogurt, but that's not enough to sustain me or give me enough energy to power through my morning. I definitely need more protein. 

Did you know that many nutrition experts now recommend getting 25-30 grams of protein before noon for the best daily nutrition, yet Americans get, on average, only 13 grams at breakfast? I know personally I don't even get close to that amount! So I've been on a quest to up my protein intake not only all day, but especially at breakfast.

Breakfast is definitely my favorite meal to make on the weekends. I just love to get creative in the kitchen first thing in the morning! Whether I'm making omelets or pancakes or oatmeal, I enjoy changing things up all the time. I'm pretty sure my kids love it, too!

Often times, especially on Sunday's, we will have brunch instead of breakfast. Then I really go all out! Homemade waffles or French toast, bacon or sausage, fresh fruit....all the fixins'. We go big! I try to get us nice and full, then we don't eat again until dinner time. It's something my mom did when I was growing up, and I've tried to keep the tradition with my family as well. Just two big meals for the day, with maybe a snack in between.

Now that summer is really and truly officially here in Michigan, fresh fruits are plentiful in farmers markets and stores all around town. The first thing I see when I walk in is beautiful berries, and I am a sucker for berries of all kinds.

I came home the other day with two giant containers of blueberries, not sure exactly what I was going to make at first, but it really didn't matter. I knew that my family would easily eat them right up. From topping my yogurt to tossing them in our morning smoothies, we had half a container gone in no time.

I recently picked up some beautiful, fresh blueberries and instantly knew I wanted to use them for a fabulous Spring dessert. It's funny, because I've not only been eating this blueberry coconut pound cake for dessert, but for breakfast and as a snack, too. It's good anytime of the day.

The cake is light and tender and not too sweet. To me it's the perfect combination. It didn't last too long in our house. Me, my kids, my parents...we all gobbled it right up. And since today is Sunday, which is one of my favorite baking days, I highly recommend you make this loaf today. I'm headed to the kitchen right now to make another!

I've raved about my love of pancakes before. And I also shared with you earlier this week that the last week of February is National Pancake Week. You know what that means, right? I have an excuse to share all sorts of yummy pancake recipes with you! 

In addition to past recipes I've shared, I gave you hearty and healthy oatmeal pancakes on Monday. Today's recipe is equally as delicious as those oatmeal pancakes. A little more decadent I think. And instead of having to cook and flip a dozen or so pancakes, we're making one giant pancake. Ladies and gentlemen, I give you the dutch baby.

Fresh blueberries are in full swing here in Michigan and they are one of my favorite fruits. Besides baking them in pies and muffins, I love to eat them plain by the handful or on top of my morning yogurt.

I was recently asked to sample some of the Tate & Lyle Sugars products and develop a new recipe or two. After I bought some blueberries a week or so ago, I knew that muffins were in my future. I whipped up a little crumb topping with the Tate & Lyle Organic Turbinado Raw Cane Sugar and the results were spectacular. I ended up with a sweet and tender muffin topped with a delicious crunchy topping. Perfect for breakfast or a snack, or any time of the day really. Who needs an excuse to eat a good muffin?


Blueberry & Mascarpone Turnovers

This month is all about cheese for our Blogger Recipe Challenge group. Do you have any idea how much I love cheese? Parmesan cheese, cheddar cheese, cream cheese, mascarpone cheese....if it's a cheese, chances are I'll eat it!

This challenge will be tons of fun for me because I like to incorporate cheese into many different types of recipes. From main dishes to apps to sweet treats, I've got lots of ideas floating around in my head!

Take this first recipe for example. Delicious turnovers filled with a sweet and creamy mixture of mascarpone and blueberries. Trust me when I say these babies are good. And very simple to make too!



Blueberry Breakfast Smoothie


One of my goals for 2014 has been to eat healthier. Since I love to bake I definitely eat my share of sweets, but I've been trying really hard to incorporate more fresh fruit and veggies into our diet and cut out processed foods. We eat a lot of salads in my house and I also make sure to pack things like carrot sticks and apple slices into my kids lunches. But that can get boring after time, and of course there are lots of other fun ways to get our intake up.
In the past I was one who skipped breakfast. I wasn't always hungry in the morning, and there wasn't always time to eat. Then I came up with this smoothie. This Blueberry Breakfast Smoothie is probably one of my favorite "healthy" breakfast treats.  The Greek yogurt fills you up and the flaxseed is good for your heart! This smoothie is sweet and delicious and keeps me satisfied until lunch.
The best part about this smoothie is how quick and easy it is to make. Just toss all of the ingredients into your blender and give it a whirl. You've got your breakfast in a glass in no time at all! And it's good on the go as well. So if you're pressed for time in the morning, make a batch of these smoothies and toss them in to-go cups, then you and your kids can have them handy in the car.
