When my sons were very young we started a tradition with my parents to have a fun and festive Christmas Eve celebration. Instead of fixing a big dinner, we each pick a few of our favorite appetizers and make a big spread to snack on all night long. We watch our favorite holiday movies, play board games, and simply enjoy each other’s company. A few years back I decided to add to our tradition and surprise everyone with a special new recipe for dessert. This Chocolate Peppermint Stick Ice Cream Cake is one dessert that is easy to make and is adored by the whole family. It tastes like Christmas and is beautiful too!

What's better than a bowl full of rich, creamy yogurt for breakfast in the morning? A bowl full of yogurt that's been topped with swirls of almond butter, a handful of harvest mix, and a sprinkling of crystallized ginger, that's what! I recently discovered my new favorite breakfast, folks. Yep, you guessed it. It's this yogurt bowl! Seriously, where has this been all my life?

I often eat yogurt for breakfast, most of the time topped with some crunchy granola. Recently though I got my hands on some new goodies from Woodstock Foods - their Organic Almond Butter and Hiker's Harvest Mix. Of course they are both amazing on their own, enjoying as a snack, but they are even more delicious when paired with the yogurt. The combination of flavors and textures is out of this world!

Growing up I had a pen pal, Tracy, who lived in Sydney, Australia. I can't remember how we first got connected, I think it was through some sort of teen magazine. I was around 12 at the time, and we wrote each other letters (can you believe it? Actual letters!) every couple of weeks. It was so awesome to learn about her life in another country. We sent each other pictures of our favorite places, and we also traded stickers. Do you remember doing that as a kid? Stickers were such a big deal back then! I had tons of them, and I think my mom still has some of them stashed away. Anyway, it was my friend Tracy who initially sparked my interest in other countries, especially Australia, and it's someplace that I've always wanted to visit.

I enjoy watching pro tennis and have really gotten into the Australian Open this year. As I've been watching, it has brought back all the memories of my friend Tracy from Sydney. I decided that in honor of her, I wanted to whip up an Australian inspired meal. Just a little something the kids and I could enjoy while watching the matches. Everyone already knows how much I love football, so it can't be much of a surprise that I love to have a big spread for my family and friends on game day. Whether we are out tailgating or enjoying the game at home, the food is one of the most important parts! Easy appetizers and finger goods are a given on game day, but I also like to serve some warm dishes. Wings, sliders, nachos, those are all favorites of course. But how about a delicious, warm dip? Spring has finally sprung! Well, technically the first day of spring is this coming Friday, but there are some definite changes in the weather here in Michigan. We've had sun every day for over a week now, and one day it even hit 60 degrees! That warm weather didn't stay for too long, but I'll take the gorgeous sun and blue skies any day.

Since we had such a beautiful weekend, I decided to put together a Sundae Bar for the family. I'll eat ice cream anytime of the year, but it's best on a nice warm day. Don't you agree? I'd been hearing all sorts of good things about the new EDY's® Frozen Custard, so I stopped at my local Walmart to pick some up, along with a bunch of our favorite toppings.

I've raved about my love of pancakes before. And I also shared with you earlier this week that the last week of February is National Pancake Week. You know what that means, right? I have an excuse to share all sorts of yummy pancake recipes with you! 

In addition to past recipes I've shared, I gave you hearty and healthy oatmeal pancakes on Monday. Today's recipe is equally as delicious as those oatmeal pancakes. A little more decadent I think. And instead of having to cook and flip a dozen or so pancakes, we're making one giant pancake. Ladies and gentlemen, I give you the dutch baby.

A few weeks ago I had the wonderful opportunity to go on an apple tour with the Michigan Apple Committee. Myself and a group of bloggers met in Grand Rapids to learn everything we could about apples and had tons of fun along the way.

Our first stop was Sietsema Orchards in Ada. We talked with Andy, the owner, and he shared with us the history of his orchard and all the different varieties of apples that they grow. They have 150 varieties on 15 acres of land.

As I considered what kind of recipe I wanted to develop, my first thought was cookies. But I've done quite a few cookie recipes in the past and I decided to challenge myself a bit.

Looking for a game day appetizer that isn't heavy and filled with calories, but still tastes good? Look no further, I've gotcha covered!

This "skinny" Spinach and Artichoke Dip is my take on our favorite Applebee's appetizer. I love the dip from the restaurant, but it's packed with fat and calories and a ton of sodium.

For my version, we replace the cream cheese with beans. Yes, you heard me right. Beans. They are light and creamy and go perfectly in this dip.

This was a hit around my house. Perfect with crackers, tortilla chips or even pita bread. Give it a try. I think you'll be surprised just how tasty it is!




Glazed Pumpkin Pecan Scones

'Tis the season for pumpkin. And we all know how much I LOVE pumpkin. I've been using it in my recipes for a few weeks now. Pumpkin pancakes, pumpkin spice lattes, pumpkin bars. You name it, I'm pumpkinizing it. 

Sorry, I know that's not a real word.

But it did sound kind of cool.

These pumpkin pecan scones are easy to make and are topped with a delicious pumpkiny glaze. They are perfect for breakfast with a cup of coffee, or even better, with a pumpkin spice latte. They also make a great dessert.

BBQ Chicken Pizza {Meat Month}

We are a pizza loving family for sure. I love making pizza at home for many reasons. 

I love the smell of the rising dough. 

I love that my kids can help with layering the toppings. 

I love that it's cheaper than store bought or delivery!

Just a couple of weeks ago I shared my recipe for Chicken Alfredo Pizza. Another one of our favorites is this BBQ Chicken Pizza. This time I followed the Pioneer Woman's recipe for basic pizza crust, however, I used bread flour instead of all purpose flour. Honestly I like the dough better with the bread flour. It makes the crust light and fluffy. But you can use whichever one you prefer or what you have on hand. I've used AP flour a zillion times and it still comes out amazing!




Spicy Pork Tenderloin Sandwiches {Meat Month}

I had a couple of pork tenderloins in my freezer and wanted to do something different with them. I've told you all before that my boys love eating things on buns, so I made a delicious spice rub for one of the tenderloins and decided to turn it into sandwiches. 

This is a very easy meal to make and is perfect for Fall. If you have a little extra time during the week this would be great for a weeknight meal but if not, it's lovely on the weekend for lunch or dinner while watching football.
