Now that spring has finally arrived I'm really into fruity desserts. To me, citrus fruits and berries = warm weather. Not that you can't enjoy these things in the winter, but something about them makes me extra happy in the spring and summer. After making these Raspberry Crumb Bars I was ready to break out my flip flops and go sit on my deck! Maybe not just yet, but soon.

The combination of buttery dough, reminiscent of shortbread, and sweet raspberries makes these bars one of the best desserts I've ever had. The bars are extra soft and full of flavor, and super easy to make. Plus they can feed a crowd, so they're perfect for any spring gatherings, Easter, or a summer barbecue (once the time is right).

These Blueberry Crumble Bars are sweet, buttery, and loaded with berries! This is a great way to use
your freshly picked blueberries, plus it's a delicious dessert!

These Blueberry Crumble Bars are sweet, buttery, and loaded with berries!

I've been loading up on fresh fruit lately, and had more berries in the frig than I knew what to do with. I love them on top of yogurt or in salads, even eating them by the handful, but I love to bake with them as well. With a big bowl of fresh blueberries staring right at my face, I decided to whip  up some bars. Not just any bars though, deliciously sweet Blueberry Crumble Bars.

These bars are extra special because the crust and the crumble topping are made with Great Grains Blueberry Morning cereal. You see, I don't just eat my cereal for breakfast, I eat it anytime! There is so much that can be made with cereal, not just eating it with a spoon. I think you can enjoy it anytime, anywhere, in many ways.

The combination of shortbread, peanut butter, pecans, and salt make these simple bars a hit with kids and
adults alike! And fair warning, you may want to make a double batch because they will be gone in no time!

How many people here grew up eating Keebler® cookies? *Raises hand really high* Come on now, don't be shy! It seems like we always had Vanilla Wafers around. Whether it was just to snack on, or in my mom's banana cream pudding, those were one of my favorites. Keebler® Fudge Shoppe® cookies were another favorite. I could eat the Fudge Stripes™ and Deluxe Grahams all day long! Of course since I grew up eating this gems I had to pass that tradition on to my kids, and I know they love Keebler® cookies just as much as I do.

Meyer Lemon Bars #SundaySupper

Welcome Spring with these bright and delicious Meyer Lemon Bars! They're sweet,
they're tart, and they are the perfect ending to any meal!

I love lemons. And I especially love cooking with lemons. Whether I'm pan frying chicken and making a glorious lemon sauce to go over the top, or making a delicious lemony dessert, lemons are definitely my favorite citrus fruit.  Meyer lemons are even better, as they have a rich lemon flavor, but they are sweeter and not so tart.

These Meyer Lemon Bars have a buttery shortbread crust and are topped with a luscious lemon filling. Dusted with a little powdered sugar {OK, a lot of powdered sugar!}, they’re as beautiful as they are delicious.

Pumpkin Bars with Cinnamon Frosting

Luscious and light pumpkin bars topped with a creamy cinnamon frosting and crunchy pecans!

IT'S PUMPKIN TIME!!! Can you tell I'm excited? The minute it hit September I was all about the pumpkin recipes. That is definitely one of my most favorite things about Fall. Well, that and football. And Halloween. And the beautiful colors in Michigan. OK, you get the point.

Chocolate Chip Bars

Soft, cake-like chocolate chip bars, perfect with a cold glass of milk!

These Chocolate Chip Bars are like a cookie, but also a bit like a cake. I know, I know, that sounds weird! But by using cake flour the bars puffed up and became crispy on the edges and soft in the center. Filled with milk chocolate chips they are ooey, gooey and just down right delicious. The kids and I loved dunking them in a cold glass of milk, just as you would a cookie. They are also good with a scoop of vanilla ice cream on top. Not that I tried that myself. Nope, not me.

Biscoff Butterscotch Chocolate Cookie Bars

I love magic cookie bars. You know, those delicious bars made with graham crackers, sweetened condensed milk and all the other goodies?? I'm sure you know what they are, although I've found over the years that everyone calls them something different.

Well around here they are known as magic cookie bars and my family loves them. When my oldest son was younger he would always request that I make them for his birthday treat to take to school. He always came home with an empty pan.

I decided to transform the old recipe for magic cookie bars into something new. Something sweet and delicious with our favorite flavors. Using Biscoff cookies as the base was definitely a genius idea. They make the best crust.  Ever.

Using coconut oil instead of butter takes it to another level as well. And makes it just a touch healthier. If that's possible with this indulgent treat.

"Lightened Up" Pumpkin Bars {Fill the Cookie Jar}

It's Fall, it's Fall, it's finally here! Well I guess it's not technically here, according to the calendar, but once it hits September I consider that Fall. Which means I can start cooking pumpkin and apple goodies and break out the cinnamon and pumpkin scented candles. Which of course I've already done!

This months Fill the Cookie Jar theme is Fall and you can imagine my excitement when I found that out! I was thrilled to write and test recipes that included some of my favorite ingredients.

Oat Bars with Walnuts & Bittersweet Chocolate

It's back to school in our house, which means it's time to start packing lunches and having after school snacks on hand. Like many other families, I struggle to make lunches less ordinary. I don't want my boys to get bored with what they're eating, plus, I want them to eat healthy!

The last couple of weeks I've been scrounging through magazines and cookbooks looking for inspiration. Luckily, I have a lot of reading material to choose from. (I'm a certified cookbook-aholic!) :)

I came across this oatmeal bars recipe in a Williams-Sonoma cookbook and knew it would be perfect for our family. I changed the recipe just slightly and the bars are absolutely delicious.

These bars are a cross between a cookie and a cake, in my opinion. They are thick and hearty and full of stuff that's good for you.
