One of my favorite things about summer is getting to eat all the ice cream. I'm sure many of you can understand and agree completely. Now don't get me wrong I eat ice cream all year round, but during the summer I go all out. Lots of homemade ice cream, ice cream sandwiches, milkshakes, and everything else in between. Speaking of milkshakes, these Coconut Cream Pie Milkshakes are my jam. I whipped them up a few weeks ago and haven't stopped making them since!

We can all use more cake in our lives, don't you agree? I know I don't make it nearly enough. I feel like cake is more for celebrations than an everyday dessert, and it's definitely perfect for the holidays. So many of us are baking now and preparing for the holidays, and I think this cake should be on your list. It's soft and tender and topped with a decadent and delicious coconut rum frosting. It's simply amazing!

I love cake. Pretty much any kind of cake. But I really love a cake that is made for breakfast. I'll admit, I've had a piece of chocolate cake or birthday cake on an occasional morning with a cup of coffee. Admit it, I know you have too! But make a cake specifically for breakfast and I'm ALL over it.

Recently I received a box of gorgeous Stemilt Pinata apples and although they taste amazing as is, I couldn't wait to put them in a few recipes. This Apple Coconut Breakfast Cake was the very first thing I made and man was that a good idea! Pinata apples are crisp and juicy and have a tropical taste, which pairs perfectly with the coconut in this cake.

Although I don't like getting up in the morning, I'm definitely more of a morning person than a night owl. I can barely stay up past 10:30 most days! Once I get up and moving I'm good to go, and I enjoy starting the day off slowly by checking my email and having a cup of coffee. One thing is for sure, I am definitely addicted to coffee and can't live without it!

If I'm out an about in the morning I typically swing by McDonald's for a McCafé coffee. {I love the McCafé Caramel Mocha and their iced coffees!} Whatever drink I choose, it always puts me in a good mood and gets my day off to a great start.

This Sweet Cherry Coconut Cooler has quickly become my new favorite summer drink. It's similar to a smoothie, but not as thick, so I prefer to call it a cooler. Because that's exactly what it does. It cools you off.

If you're like me, there are days when it's hard to find time to eat breakfast. Rushing to get ready for work, to get the kids ready to go wherever they need to be, to run here and there and everywhere....you get the point. We are all busy. But we all know that breakfast is the most important meal of the day. We need the nutrition and essential proteins and fiber to give us energy to start our day. It also helps weight control, and improves our performance. Who wants to go to a morning meeting feeling sluggish and out of it? It's better to have a good breakfast and knock that meeting out of the park!

One of the best things we can do for ourselves is plan our breakfasts ahead of time, like the night before. Whether that means prepping ingredients for a morning smoothie, or making a batch of pancakes or waffles over the weekend that can easily be reheated on a weekday morning, it's good to have things in the frig that are ready to go. This new recipe for Overnight Raspberry Coconut Oats is just that! Prep everything the night before in a bowl or jar, cover, and in the morning it's ready to eat! Easy peasy, right?

Blueberry Coconut Pound Cake

Are you a fan of blueberries? Do you go gaga over coconut? I do. Oh yes, I really do. I recently picked up some beautiful, fresh blueberries and instantly knew I wanted to use them for a fabulous Spring dessert. It's funny, because I've not only been eating this blueberry coconut pound cake for dessert, but for breakfast and as a snack, too. It's good anytime of the day.

The cake is light and tender and not too sweet. To me it's the perfect combination. It didn't last too long in our house. Me, my kids, my parents...we all gobbled it right up. And since today is Sunday, which is one of my favorite baking days, I highly recommend you make this loaf today. I'm headed to the kitchen right now to make another!

Coconut Pecan Coffee Cake

I had some friends over the other day for a little coffee and treats party. Nothing fancy, just a get together to take a breather and catch up on life. We are all so busy, so much of the time, that we don’t often get the chance to talk, much less see each other.

I decided to make just a couple of treats to go along with our coffee, and what goes better with coffee than coffee cake? In my opinion, nothing! So I went to work creating something special for my friends.

The coffee cake I made was absolutely delicious. Using my secret ingredient, plain Greek yogurt, made the cake moist and tender. And the delicious coconut and pecan topping made it extra special. It was hands down the best coffee cake I've ever made!
