Happy Monday, friends! Last week it was all about apples, this week it's all about one of my other fall favorites...pumpkin! As soon as September hits I'm pulling out all the pumpkin stops. Lighting my pumpkin candles, drinking pumpkin spice lattes, and baking all the pumpkin goodies I can dream of. This Pumpkin Coffee Cake is one of my all time favorites because it's such a simple recipe and can be on your table in less than an hour. It's perfect first thing in the morning with a hot cup of coffee!

It's finally feeling like Fall in Michigan. The nights are cool and the days have been hovering around 70 degrees or so. I can see the leaves starting to change just slightly. This is definitely my favorite time of the year. As much as I love summer, I love so many things about Fall. Wearing jeans and boots, taking scenic drives, football, and pumpkin. The time has finally come where I can make pumpkin everything!

I  know most people reserve their pumpkin recipes for the Fall only, but I'm one of the few that love to cook with it and eat it all year long. Maybe not so much in the summer, but the rest of the year for sure. Whether I'm using it in a sweet or savory recipe, pumkin is an extremely versatile ingredient. And it's healthy, too!

With all of the get together's and parties this holiday season, it's inevitable that we will have leftovers! I have always been one to get creative and turn them into something new and exciting so that my kids will eat them. There is no way they will go for eating Thanksgiving dinner three days in a row. I know you all feel the same way!  Whether I'm making open faced turkey sandwiches piled high with mashed potatoes and gravy, or turning that leftover honey ham into breakfast omelets, I make sure no leftover gets left behind. 

I also try to make sure that we eat healthy during the holiday season. There are cookies and candy and fudge to be eaten, and I think it's fine to have those treats in moderation. But I also want my family to eat their fruits and veggies and drink plenty of water and try to eat clean when we can.

I'm always looking for new breakfast ideas, especially ones that are good for busy weekday mornings. I want them to be delicious, but also hearty and healthy. They need to get me, and my kids, through the morning without being hungry, and give us plenty of energy. 

One of my favorite quick breakfasts is yogurt topped with granola and berries, so I decided to do something a bit different with my granola. I made granola muffins! I wasn't sure how the granola would do when baked, but it came out fabulous! I love the added crunch it gives the tender muffins.

It's been absolutely gorgeous here in Michigan lately. We're finally getting the perfect Fall weather - cool mornings, warm afternoons, and the leaves are starting to turn glorious colors. I've been spending lots of time in the kitchen baking with all of my windows open, enjoying the breeze and the rustle of the leaves outside my back deck. 

Between baking cookies, cakes and brownies and making slow cooker meals, it's nice to create something simple, yet a little bit decadent, that the whole family can enjoy. This pumpkin banana bread is just that! It's a quick bread, so it doesn't take a whole lot to put it together, and you should have most of the the ingredients on hand.

It finally really and truly feels like Fall here in Michigan. The mornings have been quite chilly, in the 40's, and the afternoons have been in the mid 60's or so. Thankfully the sun has been shining brightly, and the leaves are starting to turn beautiful colors! This type of weather is perfect for walks outside, bonfires, and of course, football!

It's also perfect for baking. No one is ready to turn the heat on yet, (come on, October just started!) so I like to warm up my house with the heat from the oven. Whether I'm baking a casserole, a breakfast bake, or a dessert, I love the warmth and wonderful smells that come from my kitchen this time of year. And pumpkin just happens to be one of my all time favorite scents!

You all know how much I love my slow cooker. I rave about it all the time! I use mine year round, because I think it's perfect in the colder months for warm comfort food dishes, but it's also great during the summer so that you don't have to heat your whole kitchen up while cooking!

With all that said, you can imagine how thrilled I am to be a part of my friend Sarah Olson's Blog Tour for her brand new cookbook, "The Magical Slow Cooker: Recipes for Busy Moms." I pretty sure she wrote this book just for me! OK, I know that's not true, but she wrote this book for busy moms, and that's definitely me. Sarah created her blog, The Magical Slow Cooker, in January 2103, and her cookbook was just published this March.

It's Sunday, which means it's a perfect day to bake. It's also Fall, which means we want PUMPKIN! I love to pumpkin all the things this time of year.

I have to say, this is probably one of THE best cakes I've ever made. It's incredibly moist and tender and the salted caramel sauce that's drizzled over the top is to die for. You'll have plenty of sauce leftover to drizzle on other things. Like ice cream. Or brownies. Or, feel free to eat it straight from the bowl with a spoon. I promise not to judge.

I'm not really a pie person, cakes and brownies are for sure my favorite desserts. But there is one pie that is hands down my favorite, and I would eat it any chance I get. That is pumpkin pie. I love pumpkin anything, but a slice of homemade pumpkin pie with a dollop of fresh whipped cream on top just can't be beat.

I decided to transform my favorite pie into something special, and these pumpkin whoopie pies are it. I whipped up a salted caramel filling and I'm telling you, it is amazing. And it's exactly what the whoopie pies needed to take them to the next level, over the top actually.

IT'S PUMPKIN TIME!!! Can you tell I'm excited? The minute it hit September I was all about the pumpkin recipes. That is definitely one of my most favorite things about Fall. Well, that and football. And Halloween. And the beautiful colors in Michigan. OK, you get the point.


Pumpkin Pie Cheesecake Cookies

This months Fill the Cookie Jar theme is Thanksgiving! I thought long and hard about what to make. Turkey shaped sugar cookies? Sweet potato cookies? Cranberry cookies? Ideas were flying through my head.

Until one morning, it just hit me. Why not take one of our favorite Thanksgiving desserts and transform it into a cookie?? Yes, it was a brilliant idea! And my kids agreed.

So I quickly went to work creating a Pumpkin Pie Cheesecake Cookie. I wanted it to taste just like that beloved cheesecake, but in tiny cookie form.

I will tell you right now, I think these cookies are amazing and I can't stop eating them. By using cake flour instead of all purpose flour, I created a very soft and cake-like cookie. The flavors of pumpkin pie spice and cream cheese stand out and are amazing. 



White Chocolate Dipped Pumpkin Ginger Biscotti

Happy November 1st! Can you believe it's already November? I certainly can't. This year is flying by!

And you know what that means right? 27 days until Thanksgiving. And only 54 days until Christmas! Oi vey! I am totally not ready for the holidays yet.

I've decided my 10 recipes are going to go from the start of the day to the end. I'm giving a few breakfast ideas, appetizers, some sides, desserts and of course a drink. So without further adieu, here is my first recipe!

I give to you White Chocolate Dipped Pumpkin Ginger Biscotti. Very easy to make and goes perfect with your cup of coffee. (Especially good for dunking!) Whip up a batch of these biscotti a few days before you're having guests over and they will love this special treat!




Pumpkin & Broccoli Ravioli with Sage Butter Sauce


When I found out the ingredients for this months Crazy Ingredient Challenge were pumpkin puree and broccoli, I was a bit stumped. I typically cook sweet dishes with pumpkin, like bread and pie. How would I add broccoli into the mix? Especially into something sweet!

One day we were having dinner and something just hit me. Like a light bulb when off in my brain! I've had pumpkin and squash ravioli before...why not try making pumpkin and broccoli ravioli?

Everyone I mentioned this to was a bit skeptical, especially my kids. It sounded a little...weird. Ya feel me?

But guess what? It wasn't weird. It was delicious! And quite easy to make if you ask me. I had one of my besties over for dinner the night I made it and I told her she was my guinea pig. LOL Thankfully we both loved it, and so did my son, and we finished off the whole dish. 

What's nice is that you puree all the ingredients together in your food processor so you can sneak that broccoli in without your kids ever knowing. Score for mom!

Pumpkin Spice Doughnuts

I love doughnuts. I mean, who doesn't love doughnuts? Right?

I've been on a quest for quite some time to make tasty doughnuts that are baked, not fried. I finally found them...

These pumpkin spice doughnuts are delicious and healthy. Moist and tender and filled with just enough pumpkin flavor and topped with cinnamon sugar, they truly are delightful.

My kids couldn't get enough of them either, which is saying a lot since my youngest is so stinkin' picky. :)




Glazed Pumpkin Pecan Scones

'Tis the season for pumpkin. And we all know how much I LOVE pumpkin. I've been using it in my recipes for a few weeks now. Pumpkin pancakes, pumpkin spice lattes, pumpkin bars. You name it, I'm pumpkinizing it. 

Sorry, I know that's not a real word.

But it did sound kind of cool.

These pumpkin pecan scones are easy to make and are topped with a delicious pumpkiny glaze. They are perfect for breakfast with a cup of coffee, or even better, with a pumpkin spice latte. They also make a great dessert.

Pumpkin Chocolate Chip Bundt Cake

Since the weather has cooled off around here I'm in full fall decorating, sweater wearing, pumpkin baking mode. I've got three pumpkin recipes to share with already, and I'm sure there will be more to come!

This pumpkin chocolate chip bundt cake is a spin off of the mini double chocolate bundt cakes I made earlier this year. Adding canned pumpkin and pumpkin pie spice gives this delicious chocolate cake just the right kick. If you don't remember the mini cakes, you can find the recipe here.
