It's hard to believe but school is starting soon! How did the summer go by so fast? Wasn't it just June? I'm having a hard time grasping the fact that school does in fact start next Monday, AND my baby is a senior. Seems like just yesterday he was a freshman! My oldest will be starting his junior year in college in just a few short weeks, and suddenly I feel old. Very, very old. My babies aren't little babies any more!

Anyway, sorry for getting all sappy and what not. I'll pull myself together now, simply because I've been dying to share this recipe with you. One Pot Roasted Red Pepper and Spinach Alfredo is creamy, full of flavor, hearty, and just plain delicious. If you've got one big pan and about thirty minutes or so to spare, then this meal is for you!

I was just talking about this in a previous post but I'll say it again, we love pasta around these parts. From spaghetti to fettuccine to ravioli, there isn't much that my family won't eat. I was thrilled when asked to take a Ragú® recipe and put my spin on it, and show you my #Saucesome side! Get it? Sauce-some? Like awesome, but even better. More saucier. More fun. Sorry, I'm getting carried away.

I love Ragú® pasta sauce and buy it quite frequently. What I didn't know though, is that you can easily create a one pot pasta dish with Ragú®. One pot, people. One pot! No pre-boiling of your noodles. Everything goes into one pot and cooks together. Pretty quickly too, I might add. Now that right there is saucesome. Especially for all those working parents trying to get dinner on the table fast.
