Mint Chocolate Chip Bundt Cake

Delicious and decadent, this beautiful Bundt cake is minty, chocolaty, and perfect for Spring!
Mint Chocolate Chip Bundt Cake | The Chef Next Door

Do you love Girl Scout cookies as I much as I do? Come on, fess up. I know you do! I don't think I even know anyone who doesn't like them. I always look forward to this season so I can stock up on these delicious gems. My favorites are Thin Mints, Samoas and Tagalongs.

My newest creation, this beautiful Bundt cake, was inspired by the Thin Mint. A deep, rich chocolate cake infused with peppermint extract, plus some milk chocolate chips for good measure. Sounds good, right?

Sweet Cherry Bundt Cake

Fresh Michigan Sweet Cherries fill this light and tender vanilla Bundt cake, making one delightful summer dessert!
Sweet Cherry Bundt Cake | The Chef Next Door

I picked up a big bag of fresh Michigan sweet cherries at the market last week. My kids and I love to just snack on them as is, but I had so many that I knew I wanted to bake with them as well. After taking suggestions from my fans, and thinking long and hard about what to make, I came up with this cake.

This Bundt cake is light, tender and fluffy and has hints of vanilla. The bites of sweet cherries throughout the cake give it a wonderful little pop. I felt that no icing or drizzle was necessary, but a dusting of powdered sugar would be good if you wish. I left mine as is and it was truly delicious. A little slice of summer on your plate!

Vanilla Bean Bundt Cake

I love a good cake. Especially a Bundt cake. I've made many a Bundt over the years, but this Vanilla Bean version is probably my favorite. By using whole vanilla beans, you can see the tiny little black flecks throughout the cake. And while it's baking, the smell in the house is out of this world.

This cake makes the perfect holiday dessert. Simple yet beautiful. And it's very easy to make.

If you're feeling especially festive, you could drizzle strawberries or cherries over the top, but I think the vanilla glaze is just perfect.

Pumpkin Chocolate Chip Bundt Cake

Since the weather has cooled off around here I'm in full fall decorating, sweater wearing, pumpkin baking mode. I've got three pumpkin recipes to share with already, and I'm sure there will be more to come!

This pumpkin chocolate chip bundt cake is a spin off of the mini double chocolate bundt cakes I made earlier this year. Adding canned pumpkin and pumpkin pie spice gives this delicious chocolate cake just the right kick. If you don't remember the mini cakes, you can find the recipe here.
