Happy Monday, friends! Last week it was all about apples, this week it's all about one of my other fall favorites...pumpkin! As soon as September hits I'm pulling out all the pumpkin stops. Lighting my pumpkin candles, drinking pumpkin spice lattes, and baking all the pumpkin goodies I can dream of. This Pumpkin Coffee Cake is one of my all time favorites because it's such a simple recipe and can be on your table in less than an hour. It's perfect first thing in the morning with a hot cup of coffee!

I'm gonna be honest here, coffee cake is my weakness. I would make one every few days if I could, but I don't because I know I'll devour it all by myself. Coffee cakes are one of those things that are good for breakfast, brunch, an afternoon snack, and even dessert. I can eat coffee cake all. the. time. See the problem here? I need to learn to control myself better. But since Mother's Day is this weekend, and since I really want to spoil my mom, I'm making myself this Cherry Almond Coffee Cake. I mean, her. I'm making her this coffee cake. Sorry about that.

If you follow me on social media, you may have seen my pics and InstaStories a few weeks ago about a meal kit challenge I received from Milk Means More. You see, they sent me a box of surprise ingredients and in true "Chopped" fashion, I had to come up with a couple of dessert recipes using those ingredients. I was sent eight ingredients that were split into two groups, one group for each recipe. 

My first challenge was to use cream cheese, chocolate chips, instant coffee and maple extract. After playing around in the kitchen a little bit, I decided to make a coffee cake. Not just any coffee cake though. This coffee cake has a hint of maple for extra flavor and is loaded with chocolate chips. To take this cake to the next level, a coffee cream cheese glaze is generously drizzled over the top. Did that get your attention?

There were the most beautiful peaches at the market recently. To me, there's nothing better than biting into a soft, fresh peach during the summertime. It's so tender, the juice practically runs down your arm. Peaches are definitely one of my favorite fruits, and one I can't seem to get enough of.

You know I love me some muffins. Sweet muffins, savory muffins, breakfast muffins, dinner muffins. I'll have them all! My favorite way to eat them is with a piping hot cup of coffee, so it's no surprise that I eat them most often in the morning. Or as an afternoon snack. I do like coffee and muffins in the afternoon, too. Like high tea, but not quite as fancy. 

Another one of my favorite things is coconut oil. It's such an amazing product, with tons of health benefits, and is so versatile. I use coconut oil in my baked goods in place of butter, shortening, and other oils. Obviously it depends on the recipe if it's a good swap, but in most cases when I bake I like to use it. Take these Rise & Shine Coffee Cake Muffins for example. They are made with delicious Barlean's Virgin Organic Coconut Oil. The oil gives the muffins the slightest coconut flavor, and keeps them nice and tender.

I've got a poem to share with you today. It's short, sweet, and to the point. I think you'll like it.

I like coffee,
I like cake,
One day I decided I wanted to bake.

A cake I shall bake,
with coffee inside,
and it tasted so delicious so I nearly cried.

So what we all learned here today is that I'm not much of a poet.  Nope, not a poet at all. But I sure can bake one heck of a delicious coffee cake.

I have a well known love affair with bananas. Whether they're in my cereal or yogurt, or made into bread, I always have bananas of some kind around my house. Last week I had some nice mushy ones on my counter, begging to be baked into something glorious. But instead of going with a usual bread - and believe me, I have many different versions of banana bread - I decided to go in a different direction and make a coffee cake.

I love me a good coffee cake. I mean, what isn't to love? It's perfectly acceptable to eat coffee cake for breakfast. That's what it was meant for actually. And you can eat it for dessert, too. Or even as a snack. Or maybe I just want to eat it at every meal. And maybe I did one day! Just maybe. Who knows.

Muffins, man. They're all the rage. I love muffins. I also love coffee cake. So I thought, why not make a coffee cake muffin? Perfect for breakfast on the go. Also perfect for sitting at the breakfast table with a magazine while sipping on your morning coffee. I'd say these muffins are pretty versatile.

I also have a secret ingredient in my muffins. Wanna know what it is? OK, I'll tell ya. The secret ingredient is French vanilla yogurt! The yogurt makes the muffins incredibly moist and tender. Light and fluffy, I say. And the topping, well that's just downright delicious. Who knew that walnuts, sugar and cinnamon could be so darn amazing? It's the simple things I guess.

Coconut Pecan Coffee Cake

I had some friends over the other day for a little coffee and treats party. Nothing fancy, just a get together to take a breather and catch up on life. We are all so busy, so much of the time, that we don’t often get the chance to talk, much less see each other.

I decided to make just a couple of treats to go along with our coffee, and what goes better with coffee than coffee cake? In my opinion, nothing! So I went to work creating something special for my friends.

The coffee cake I made was absolutely delicious. Using my secret ingredient, plain Greek yogurt, made the cake moist and tender. And the delicious coconut and pecan topping made it extra special. It was hands down the best coffee cake I've ever made!
