How many people here grew up eating Keebler® cookies? *Raises hand really high* Come on now, don't be shy! It seems like we always had Vanilla Wafers around. Whether it was just to snack on, or in my mom's banana cream pudding, those were one of my favorites. Keebler® Fudge Shoppe® cookies were another favorite. I could eat the Fudge Stripes™ and Deluxe Grahams all day long! Of course since I grew up eating this gems I had to pass that tradition on to my kids, and I know they love Keebler® cookies just as much as I do.

I'm sensing a little bit of a theme this week. Do you see it, too? I've been talking about the importance of eating breakfast lately, so I thought I'd share another fabulous recipe with you! These Peanut Butter Protein Pancakes are not only delicious, but they are protein packed and will definitely jump start your day. I used Jif Peanut Powder for the first time ever when I made these pancakes, and quickly became obsessed! The powder is great to add to smoothies, in your baked goods, and, of course, in pancakes!

Jif Peanut Powder contains the same amount of  protein as traditional peanut butter, but with less fat and sugar. Another awesome fact: Jif Peanut Powder is made from just one ingredient, fresh roasted peanuts, and has no added sugar or salt! That right there is music to my ears.

I don't know about you, but I looove peanut butter. On toast, in a sandwich, in my baked goods, even in my smoothie. It's delicious no matter how you eat it and it's really quite a versatile ingredient. Peanut Butter & Co. and Bob's Red Mill declared October as #Oatober. As part of the #YumSquad, I was tasked with developing a recipe using peanut butter and oats, and of course I was thrilled! I mean, what's not to love about peanut butter and oats? 


One of my favorite breakfasts, especially during the week, is yogurt topped with granola. It's quick and easy, and can also be portable if need be. I decided to take one of my favorite flavors of Peanut Butter & Co. peanut butter, The Bee's Knees, and mix it with some Fall ingredients to make a delicious and healthy granola. I call it Peanut Butter Harvest Granola! The pumpkin seeds, hazelnuts and dried cherries seems like a perfect Fall combination!

Have you jumped on the pumpkin spice train yet? I've been riding it for a long time, my friends. A long, long time! As soon as Fall hits, I'm standing in line at my favorite coffee shop to grab a pumpkin spice latte, or PSL as everyone likes to call them. In my opinion, they are the bomb! So I'm sure you can imagine the sheer joy I felt when I received a lovely gift box from my friends at Peanut Butter and Co. and discovered that their new seasonal flavor is Pumpkin Spice. Say what?!? Pumpkin spice peanut butter? What could be better?

My mind was instantly reeling with ideas of what to make with this glorious peanut butter. Of course I made myself a piece of toast instantly so I could try it out, and it was just as good as I had imagined. But I wanted to make a sweet treat with it. And then it hit me. Peanut butter bars. Pumpkin spice peanut butter bars. So they'd be all nice and fall-like. With chocolate on top. And a pinch of sea salt. Ohmygoshtheyaresogood. It was hard not to eat half the pan in one sitting. Seriously people.

Now that the kids are back in school, I'm back to planning quick and easy breakfasts for them during the week. The biggest problem I have is that my kids aren't hungry first thing in the morning. They don't feel like eating until mid-morning and, in fact, on the weekends we probably don't have breakfast until 10:30 or 11:00. This presents a problem when I'm pushing for them to eat at 7:00 am!

Lucky for me, I found a way around this issue. I get them to drink their breakfast! I've been making smoothies for a long time, so I decided to create some fun versions for quick breakfasts. This PB & J Yogurt Smoothie is definitely a favorite, and currently the most requested in our house every week.

Cookies. I love 'em. A sweet tooth. I've got it. This skillet cookie took care of that problem for me last week. When you're really in the mood for some cookies, but you're pressed for time and don't want to bake a whole batch. Or you're just really impatient, like me, a skillet cookie is the answer.

You're essentially making cookie dough like you normally would, but pressing it into a skillet instead of individual cookies. In 30 minutes you'll have yourself a hot, delicious and GIANT cookie, fresh from the oven. And it feeds a crowd, too. So it's perfect if you have company, or if you're just feeding your family.

I've had cookies on the brain lately. I'm like the cookie monster...me want COOKIE! So I went and developed a new recipe. A recipe containing two of my favorite things...peanut butter and chocolate. I mean, who doesn't love them, right? Especially the combination of the two. Together they are freakin' amazing.

This is a very simple recipe. A basic peanut butter cookie recipe with some delicious milk chocolate chips mixed in. I added a lot of peanut butter in there, so the cookies are super peanut buttery. Is that even a word? Soft and chewy, I bet you can't eat just one!

I'm so excited to be a participant in the The Great Food Blogger Cookie Swap again this year! This is the fourth annual swap, but just the second year that I've been involved. I've got cookies on the brain. No, seriously...I do! It's time for my annual cookie baking frenzy and I've been busy lining up all the recipes I want to make this year. Along with my traditional favorites, I'm creating some new recipes too. 

Each holiday season my mom and I get together and bake dozens of cookies to give to friends and family. We each bring a few of our favorite recipes, then share all the cookies that we bake. My kids help too, but now that they are getting older it's not as much fun for them as it used to be. Of course they love to sample the cookie dough and the finished products though!

Being a mom to two growing teenage boys means keeping the pantry and frig stocked with lots of good things to eat. In addition to fresh fruits and veggies, I love to have portable and handheld snacks at the ready. We eat a lot of yogurt, granola bars and trail mix, and I enjoy making homemade healthy snacks as well.

I've made different kinds of homemade granola before, as well as my own granola bars. These little energy bites have similar components to a granola bar, just in a different shape. I saw a similar recipe for these bites on the Door to Door Organics website and then created my own version. I love to keep a batch in the frig and when the kids are hungry or need a healthy treat before a sporting event, they can reach in and grab a few and go.

Peanut Butter Chocolate Banana Bread

I love banana bread. I know, I've told you this before. I'm just telling you again in case you forgot.

I had a bunch of bananas that were about to go bad so I decided to kick my standard banana bread recipe up a notch. Remember the peanut butter cupcakes I made last week? I used the Jif Whips spread in those and now I'm obsessed. I mean seriously, that stuff is like a drug. I can eat it by the spoonful straight from the jar.

So I added some of that peanut butter and chocolate spread to my bread. Oh and chocolate chips too. I mean, why not? 

The bread came out super moist and tender, probably due to that fluffy peanut butter spread. Totally delicious. And my boys gobbled it up too.

I love Halloween and finally got my entire house decorated last weekend. I had some things out but not all of my goodies, so I finished it all up. I think other than Christmas, Halloween is my favorite holiday!

Since I was in the Halloween spirit I decided to make some fun cupcakes. I tweaked my peanut butter cupcake recipe a bit and they turned out so good! My kids, and parents, devoured them.

It was my daddy's birthday this past weekend and I wanted to make him something special for dessert. He doesn't eat a lot of sweets anymore, so I wanted to transform one of my recipes into something with fewer fat and calories.
