Hello friends! I know it's been a little quiet around here lately and I apologize for that. You see, I started a new job the first of the year which has rocked. my. world. I love the job and love what I do but it is extremely busy. I've been working 9+ hour days and still keeping up with the normal mom/family/animal/household stuff, which has left me a bit tired haha. I finally feel like I'm getting into a nice routine and am excited to be recipe developing, cooking and photographing once again. What that means for you is new recipes...yeah!

Cookies. I love 'em. A sweet tooth. I've got it. This skillet cookie took care of that problem for me last week. When you're really in the mood for some cookies, but you're pressed for time and don't want to bake a whole batch. Or you're just really impatient, like me, a skillet cookie is the answer.

You're essentially making cookie dough like you normally would, but pressing it into a skillet instead of individual cookies. In 30 minutes you'll have yourself a hot, delicious and GIANT cookie, fresh from the oven. And it feeds a crowd, too. So it's perfect if you have company, or if you're just feeding your family.

One of my very favorite things about summer is the abundance of fresh fruits and vegetables available to cook and bake with. You don't have to look very far for inspiration! So of course for me that means lots of fruit desserts because well, we all know how much I love to bake sweet stuff.

This skillet peach almond crisp is a very simple dessert. Made with fresh, juicy peaches and crunchy almonds, it's literally bursting with flavor. A sweet and buttery crumble topping turns crispy and crunchy in the oven. What more do you need? Well, maybe a scoop of vanilla ice cream right on top, but that isn't a must. The crisp is definitely delicious all by itself, but the ice cream certainly doesn't hurt.

It's still a few weeks away but I'm already planning out my sides for Thanksgiving. We always have the standards - dressing, mashed potatoes and sweet potatoes - but each year I like to add a few new recipes too.

I made these Skillet Cinnamon Apples over the weekend and right away I told my son, these are going on our Thanksgiving table! They are simple to make, budget friendly, and they taste absolutely amazing. Who knew that just a few ingredients could turn into something so divine?!

I love my cast iron skillet. I use it for everything from main meals to cornbread to breakfast to desserts. I cook with it on the stove top as well as in the oven. My skillet has never done me wrong.

I especially love making skillet desserts. Something about digging my spoon or fork straight into the pan and eating my dessert warm just really gets to me. These Skillet Pecan Brownies remind me of a fudgy cake that I can't stop eating.

For me, nothing says fall like a warm apple crisp or cobbler. That is the quintessential fall dessert in my mind. The dish is comforting, makes the house smell absolutely amazing, and reminds me of my childhood.

This apple pear crisp is made in one skillet, is quick, easy and most importantly, delicious. You can have it on the table in less than 45 minutes. So what are you waiting for? Grab the ingredients and get cooking!


Cheesy Hash Brown Breakfast Skillet

As if I needed another reason to love weekend breakfasts, I recently came up with this delicious and hearty Cheesy Hash Brown Breakfast Skillet. Delicious veggies, gooey cheese and soft eggs are right up my alley. 

Now I shredded my own potatoes to make this, but if you have frozen shredded potatoes or hash browns already at home, be my guest to use those up! One tip I have if you shred your own, be sure once they are shredded that you wrap them in a few paper towels and wring them out. If they are too watery they won't brown up in the pan!

My next step is to go out and buy myself a few of those cute little individual skillets, so that I can be fancy and make myself one of these during the weekdays. Just one tiny skillet for little ole' me. With one beautiful egg in the center. It will be glorious I tell ya.
