Summer has finally arrived and you know what that means...it's grilling season! Most summer evenings you can find me on my back deck, cooking on the grill, enjoying an icy beverage, and eating my dinner at my outdoor table. Since warm weather season isn't around too long in Michigan I try to enjoy every single moment that I can outside. Grilling just happens to be one of my favorite activities and I can proudly say that, after years of practice, I am Queen of the Grill!  

One reason I love to grill is that there is less mess in the kitchen. If I can throw my meats and veggies on the grill, there is no need for extra pots and pans in the house! Another plus is that it's quick, and you don't need to think too hard about what's for dinner. I try to keep a lot of meats and fresh veggies on hand so that I can pull together a quick grilled meal in no time.

Happy Monday, my friends! For many of us whose kids were on spring break last week, today we are getting back to the grind. Back to school, back to work, and back to our old routines. It's hard to get back into the swing of things after a week of relaxation, but a girls' gotta do what a girls' gotta do. Amiright? Slow Cooker Spicy Posole Verde | The Chef Next Door

Well, winter has definitely arrived in Michigan! Snow, wind, and dreadfully cold temperatures means my favorite place right now is snuggled up on my couch with my favorite blanket. While I'm all cozy on the couch, you'll probably also find me watching football. I love this time of year when the weather is frightful and the football playoffs are on. There's no place I'd rather be than with my family watching the big game!

Of course while we are spending the weekend watching football we have to eat delicious food. Cold weather calls for comfort food, in my opinion. A big pot roast, a pot of soup, I want it all. This Slow Cooker Spicy Posole Verde is my new favorite dish, especially while watching football. It's warm and spicy and full of amazing Mexican flavors. Pozole (or posole) which means hominy, is a traditional Mexican stew. Posole can be made many ways but it's basically made from hominy, meat (traditionally pork), and different chile peppers. My version contains green chiles and El Yucateco Green Habanero Hot Sauce, which gives the stew a nice kick!

I love a good pork chop. It's taken me awhile to get my kids to feel the same way, but a good pork chop can be the perfect canvas for lots of different flavor combinations.

This version is light, simple, and made with fresh ingredients that you most likely have at home already. I love the combination of lemon and garlic, the spicy, tart flavors go perfectly with the pork. Plus, these two ingredients are heart healthy! 


Slow Cooker Shredded Pork Taco Bowls {Meat Month}

I know I told ya'll earlier in the week that I had some pork tenderloins to cook up. I used one to make delicious spicy pork tenderloin sandwiches. Today I used the other one to make these amazing shredded pork taco bowls. The best part? The pork cooked in my slow cooker all day!

I guess you could say this meal is a little like Sarah's Semi-Homemade. :) I used the Roasted Pasilla Chile cooking sauce from Herdez to slow cook my pork all day. Then I baked up some Azteca crispy salad shells. Add beans, cheese and all your fresh veggies and it's a perfect dinner!


Spicy Pork Tenderloin Sandwiches {Meat Month}

I had a couple of pork tenderloins in my freezer and wanted to do something different with them. I've told you all before that my boys love eating things on buns, so I made a delicious spice rub for one of the tenderloins and decided to turn it into sandwiches. 

This is a very easy meal to make and is perfect for Fall. If you have a little extra time during the week this would be great for a weeknight meal but if not, it's lovely on the weekend for lunch or dinner while watching football.
