I love a fresh, delicious salad just about any day of the week. My family actually eats a lot of tossed salads with our dinner each day, but I enjoy mixing things up and trying new things. I also really like to make main dish salads, especially during the spring and summer. There is just something so very refreshing about having a bright green salad filled with tons of veggies and a drizzle of dressing when the weather is warm.

We all know I have a deep love for quesadillas, and so do my kids. From bean and cheese to steak to apples and cheese, there are a million different ways to make em'. My current obsession is this new vegetarian version - black bean, corn and pepperjack cheese. Yum, yum, and YUM! They are a breeze to make and perfect for a weeknight meal or even for lunch. They are packed full of flavor as well as fiber and protein to give you all the energy you need for a long night of homework, baseball games, or whatever else you might have going on.

We've been watching a lot of basketball lately, as I'm sure many have. Sometimes we have friends and family over to watch the games, but most of the time we just watch as a family. I whipped up some easy and delicious Beef & Bean Burritos the other day and they were perfect for the big game. I spiced my beef up with a can of Ro*Tel and the burritos were delicious! I used the mild variety because my youngest doesn't like really spicy foods, but you can substitute with the Original or Hot if you like some heat!
