If you've been around here for awhile then you already know how much I love Mexican food. Taco Tuesday? That doesn't exist around here. I want tacos EVERY day! We often have our usual quick and easy ground beef tacos during the week and I reserve making my favorite chicken for nachos or beef or pork for carnitas for the weekends since that's an all day adventure as I slow cook the meat in the oven for hours. **Spoiler alert** I've cut my cooking time down to an hour! You heard me right...ONE HOUR...from start to finish. That means I can have carnitas any day of the week, even on busy weeknights!

Can you believe it, Christmas is just one week away! I've still got a few gifts left to buy, and I haven't even started wrapping yet, but like every year I know it will all get done. Thankfully I've got all my menus planned for the weekend and Christmas day, and just a handful of things to pick up at the grocery store. Things are coming together well and I'm looking forward to spending this special time with my family.

I've been in Kansas all weekend on an amazing ranch trip with Certified Angus Beef. We've been learning all about ranch life, caring for cattle, beef quality, and so much more. We even had the most amazing chuckwagon dinner in the pasture! (I'll share more about my entire experience in a separate post soon!) In honor of our trip, this weeks' Sunday Supper theme is Cowboy Cooking. You know, like recipes from the old west! I decided to make a hearty and delicious Chuckwagon Beef Stew, which was quickly devoured by my son. It's stick to your ribs good and full of amazing flavor.

Father's Day is just around the corner and I'm already planning dinner for my dad. It's been a tradition for years now that I cook for him on this special day. There's no going out to eat around here, everything is homemade! He's pretty easy to please, but I always ask him if he's craving something or has any special requests. This year when I asked he told me that he'd love steak on the grill. Instead of cooking a whole steak, I've decided to make these Grilled Southwestern Beef & Tomato Kebabs with Lemon Orzo. The beef is tossed in southwest spices and grills up tender and juicy. The sweet grilled tomatoes add the perfect pop of flavor!

My kids have always loved sandwiches, especially my oldest son. Put anything between two pieces of bread or a bun and he's one happy guy. Whether I grill chicken, make a pork tenderloin, or even make a pot roast, he loves it more if it's made into a sandwich. Who can blame him? You can pretty much turn anything into a sandwich and it will rock!

A couple of weeks ago I picked up a gorgeous Certified Angus Beef brisket flat from my local Meijer store. I wanted to create a sandwich that was hearty and full of flavor, so I slow cooked the brisket in the oven with beer, onions, and mushrooms. Of course there were a few other ingredients, but those were the main components.

By now you should all know how much I love Mexican food. It's a staple in my weekday meal rotation, changing things up between tacos, enchiladas, nachos and taco salads. I've never been one to go out to dinner on Valentine's Day. Not in a very long time at least. I would much rather cook a special meal and enjoy being at home with my family. When my kids were younger I always let them choose what they wanted for their special dinner, but now that they're older I like to surprise them. This year I'll be cooking for two, myself and my youngest son, so I want to make us something special.

Chili is definitely one of my most favorite dishes to cook during the cold winter months. Not only does it warm you up, but it warms up the house and smells amazing while it's simmering away on the stove. I've made a lot of pots of chili over the years, from the traditional beef chili to white chicken chili and so much more. Recently I gave my chili a smoky kick with the addition of chipotle powder and it was a huge hit with my family. The chipotle adds a little bit of spice, but a lot of richness and flavor.

Lean ground beef, Red Gold tomatoes and fresh green beans are the stars of this easy one pan meal. Oh, and you can't forget the cheese. Delicious feta cheese to be exact. It's the simplest of dinners, but one that my entire family absolutely loves.

We are all fans of quick and easy weeknight meals, am I right? Between work, school, sports, and everything else in between, there are days when there isn’t a lot of time to get dinner on the table. I try to pre-plan as much as I can on the weekends, because making home cooked meals for my family as often as I can is very important to me.

One of my favorite types of dinners are one pot meals. They are quick and easy, and there isn’t a lot of clean up involved. Which means more time for other things. Like my sons basketball games. Or catching up on laundry. Or binge watching my favorite show. (Shh, that one is our little secret!)

We've been watching a lot of basketball lately, as I'm sure many have. Sometimes we have friends and family over to watch the games, but most of the time we just watch as a family. I whipped up some easy and delicious Beef & Bean Burritos the other day and they were perfect for the big game. I spiced my beef up with a can of Ro*Tel and the burritos were delicious! I used the mild variety because my youngest doesn't like really spicy foods, but you can substitute with the Original or Hot if you like some heat!


One Pan Easy Beef Stroganoff

School started for my youngest son last week and the madness has begun! Since he plays football and has practice every day, I really need to make use of my time in the kitchen. By the time he gets home he is starving and isn't in the mood for me to make a complex, time intensive dinner. I can save those for the weekends!

I've always loved Beef Stroganoff, but my standard recipe for years has been in the slow cooker. I love my slow cooker and of course it's perfect for busy weeknights, but I wanted to come up with a lighter version of stroganoff that could be made in 30 minutes or less. And I did it!
