My kids have always loved sandwiches, especially my oldest son. Put anything between two pieces of bread or a bun and he's one happy guy. Whether I grill chicken, make a pork tenderloin, or even make a pot roast, he loves it more if it's made into a sandwich. Who can blame him? You can pretty much turn anything into a sandwich and it will rock!

A couple of weeks ago I picked up a gorgeous Certified Angus Beef brisket flat from my local Meijer store. I wanted to create a sandwich that was hearty and full of flavor, so I slow cooked the brisket in the oven with beer, onions, and mushrooms. Of course there were a few other ingredients, but those were the main components.

We are in the heart of college basketball season, hockey season, and of course, awards season. I don't know about you, but for me all of these events require fun foods to eat while watching. I love having friends and family over to watch our favorite teams play, and I enjoy watching the awards shows with friends, too. As we transition from Winter to Spring the first thoughts that come to mind {other than warmer weather!} is food. It's almost time to finish off the comfort foods and move forward with fresh veggies and fruits, lighter meals, and breaking out the grill! Although the type of food we eat may change, the fact that I need quick meals for my family doesn't change one bit. We are still busy.
