I absolutely love fresh strawberries. Whether I'm eating them by the handful, as a topping for my yogurt, or buzzed into a smoothie, there is nothing better than the taste of those fresh berries. Lucky for us, it's Florida Strawberry Season! Florida Strawberry season runs from November to April. The unique growing conditions during the Florida winter results in the sweetest, juiciest strawberries. Did you know that one cup of whole strawberries has just 46 calories? Plus they are full of vitamin C! They make the best snack any time or day of the year. Even though I live in Michigan, I can enjoy fresh Florida strawberries throughout the entire winter. It's really no secret that I love donuts. Donuts of every shape, size and flavor. Filled donuts, glazed donuts, cake donuts...I'll eat 'em all. My waistline tells me differently though! So I've come to love baking donuts at home. I've made several variations over the years that have been absolutely delicious, but this new recipe that I came up really takes the cake! And it's perfect for summer.

These little mini donuts are bursting with fresh lemon flavor and are also topped with a sweet lemon glaze. The best part is how teeny tiny they are! Perfect for tiny hands to handle, and especially great for portion control, these Mini Lemon Poppyseed Donuts with Lemon Glaze are my new favorite. Made with the new Mrs. Fields Cutie Pie™ Mini Donut Pan, they are quick and simple to make and super adorable!

Belgoods offers silicone bakeware such as muffin pans, spatulas, baking mats and my personal favorite, the Mini Donut Pan. When I found out that we could pick a product to review, I knew the donut pan was for me! I mean, come on. It was a simple choice for this donut lover.  

I received my pan and I have to say I was quite impressed. This little guy is flexible, unbreakable, easy to clean and is oven safe to 445 degrees. The next step was trying it out!

I had a lot of fun developing this delicious mini donut recipe. I was thinking of spring and summer and wanted a flavor to reflect that. I also wanted the recipe to be somewhat healthy!
