HELLO, friends! It's been awhile since I've been here. How have you been? I hated being away for so long, but 2018 really got the best of me. I've had quite the hard time finding the right balance between my full time job and the blog. OK let's be real here, there hasn't been any balance! My job keeps me busy 9-10 hours a day so there isn't much time left for me and blogging once you throw in cooking, cleaning, walking the dog, exercising, seeing my kids....you get the drift. But I've come up with a plan for 2019 so that I finally have some BALANCE and can work and blog. It's a work in progress so bear with me, but I'm hoping to start posting one to two new recipes per week starting in January. I'm setting a goal to do a minimum of one but I'd love to do two. Baby steps, that's what I keep reminding myself.

Merry Christmas Eve Eve, my friends! I can't believe that Christmas is just two days away. It certainly has come fast this year and I still have a few things to finish up before I'm officially ready. What can I say, I'm a procrastinator! I've got my shopping done but I have plenty to wrap. I guess we all know what I'll be doing today. 😉 Before the holiday gets here I just had to share one more of my favorite recipes with you...Christmas Stollen Bread! Stollen bread originated in Germany and is basically a sweet bread containing dried fruits and covered in powdered sugar. Sounds delicious, right? Well it is!

Irish Soda Bread

Celebrate St. Patrick's Day with this quick and easy traditional Irish Soda Bread. Baked in a cast iron skillet,
the outside gets a golden crispy crust, while the inside stays tender!
Irish Soda Bread | The Chef Next Door
I've got a list sitting on my desk of recipes that I want to make. Not recipes that I've developed, or even thought up, but traditional recipes that have been around for years, but I have never made. On the top of that list is Stollen Bread, followed very closely by Irish Soda Bread. Since St. Patrick's Day is just a few days away, I decided to try my hand at making the Irish Soda Bread. {Don't worry, Stollen Bread is next!
