The farmers market is brimming with fresh produce this time of year and one of my absolute favorite finds are heirloom tomatoes. Not only are they gorgeous in color, but they are juicy and super flavorful. There are so many ways to enjoy these beauties, but my typical go-to is to use them as a topping for pizza. You may remember that early last month I attended the Food & Culinary Professionals 2017 Culinary Workshop in Napa with the Dairy Industry of Michigan. We attended different educational sessions and also participated in hands on activities, one of which was making our own wood fired pizzas. Even though I don't have a wood fired oven in my backyard, I was so inspired by our trip that I had to try and recreate our pizza at home!

Happy New Year, friends! Can you believe that 2017 is already here? I'm still trying to wrap my head around how quickly 2016 went by. I hope you all had a fun and safe evening last night. As for me, I chilled at home with my son. We played games, watched football, and of course, watched the ball drop. I've never really been one for going out on NYE and am quite content being home with my family. Big party animal I am, huh? 😉

Now that the holidays are quickly coming to a close, the kids will be back to school before we know it and our hectic lives will begin again. One of the biggest challenges that we all face is dinner. The kids get home from school and are starving, and the last thing us parents want to do when we get home from work is stand in the kitchen for an hour cooking. How about we enjoy an easy supper recipe to get us back into the swing of things?

Everyone knows I love pasta, and you should know by now that also I love quick and easy meals. With how busy we are {and I know you are too} it's a relief to have a dinner recipe that is simple, healthy and delicious to feed my family any weeknight. With that being said, I'm celebrating National Pasta Month, or as my friends over at Dreamfields Pasta call it, #HealthyPastaMonth, by sharing this amazing Pesto-Herbed Angel Hair and Peas!

All month long Dreamfields is featuring pasta recipes focused on a different theme, and this weeks' theme is “Go Green." My Pesto-Herbed Angel Hair and Peas fits in with that theme perfectly, don't you think?

It's no secret I love Italian food. We probably eat it at least one night a week at our house. It could be rigatoni with meatballs, cheese tortellini, or even spaghetti. Whatever it is, I'm always up for it! Paired with a big salad filled with fresh veggies and some bread, and I'm a happy girl.

Did you know that "mangia" in Italian means eat? On Italian night at our house, I always yell to the kids, "mangia, mangia!" That means get yourself to the table now, it's dinner time! With two growing teen boys, they are quick to come!

Grilled Chicken & Kale Walnut Pesto Panini

Juicy, grilled chicken and fresh kale walnut pesto meet inside a soft ciabatta bun
to create the most mouthwatering panini!

Quite awhile ago I teased you all on social media with a delicious kale walnut pesto that I made. It was probably a good four weeks ago or so, and I had promised to share the recipe soon. So yeah, a month has passed and I'm FINALLY getting around to posting it! I'm not sure what happened and how all that time slipped by, so I hope you'll forgive me. Luckily the recipe is well worth the wait, so there's that.

This pesto is seriously the best stuff I've ever had. I love kale anyway, but when you transform it into a pesto, it just pops. Combined with Parmesan cheese, lemon, garlic and crunchy walnuts, I just really can't even describe it. I insist you try it yourself!
