We can all use more cake in our lives, don't you agree? I know I don't make it nearly enough. I feel like cake is more for celebrations than an everyday dessert, and it's definitely perfect for the holidays. So many of us are baking now and preparing for the holidays, and I think this cake should be on your list. It's soft and tender and topped with a decadent and delicious coconut rum frosting. It's simply amazing!

I love a good salad, especially this time of year when fresh fruits and veggies are becoming abundant. Blueberries are a favorite around my house, whether baked into a dessert, on top of a yogurt parfait, or just eaten by the handful, the kids and I sure do go through a lot of them! 

I eat salads often but am always trying to change things up a bit so they don't get boring. Adding fresh fruit is a great way to perk up your salad and give it tons of flavor. This Blueberry & Toasted Pecan Mixed Greens Salad with Orange Vinaigrette has quickly become one of my new favorite salads, and I'm pretty sure I ate it 5 days in a row for lunch! You get a crunch from the toasted pecans, a little salty bite from the feta, a sweetness from the blueberries, and then there's the vinaigrette. Oh yes, this orange vinaigrette is amazing! I can see it being a staple in my frig all year long.

I have a well known love affair with bananas. Whether they're in my cereal or yogurt, or made into bread, I always have bananas of some kind around my house. Last week I had some nice mushy ones on my counter, begging to be baked into something glorious. But instead of going with a usual bread - and believe me, I have many different versions of banana bread - I decided to go in a different direction and make a coffee cake.

I love me a good coffee cake. I mean, what isn't to love? It's perfectly acceptable to eat coffee cake for breakfast. That's what it was meant for actually. And you can eat it for dessert, too. Or even as a snack. Or maybe I just want to eat it at every meal. And maybe I did one day! Just maybe. Who knows. 

Apple Pecan Bundt Cake with Salted Caramel Drizzle

Today I'm really excited to be the Guest Blogger over at Michigan ApplesLast year I was blessed to go on an amazing tour with them, and I learned firsthand the history of apple orchards, the growing process, the picking process, and so much more. It was such a fun day and I learned a ton! (You can read all about my experience here) When I came back all I wanted to do was cook with apples. The great thing is that apples can be used in both savory and sweet dishes. They are very versatile like that. The first recipe I created once I was back home was an Apple, Fig, Feta and Arugula Pizza. A sweet, spicy and savory treat that my whole family loved.

Banana Pecan Pound Cake

Lately I've become quite obsessed with my Bundt pan. First off, it makes adorable cakes. Second, said cakes are delicious. Third, they are so very versatile. Plus they are simple to make. You can dress them up with a fancy glaze or drizzle for a party or get together, or just dust them with a little powdered sugar to give it a little extra somethin' somethin'. Any way you decide to make it, these cakes are downright delicious.

Since I also have a banana obsession, I thought I'd marry my two favorites - bananas and my Bundt pan. So here we have a Banana Pecan Pound Cake. Pecans are also my love. So many delicious things in this cake, and it's a breeze to make. I'm calling it a pound cake versus a Bundt cake because the texture is most definitely like a pound cake. And there isn't a glaze or a frosting, just a simple bit of powdered sugar.

I love me some cookies. I mean, who doesn't love cookies? I don't think I've ever met a cookie that I haven't liked!  Based on this knowledge I'm sure you can imagine my excitement when I was recently sent a couple of gorgeous Silpat baking mats to test out, one of them being the new Perfect Cookie mat. Pecan pie is a holiday favorite in our family. I'm pretty sure that pecan and pumpkin pies have been a staple at our Thanksgiving meals for as long as I can remember. I was never the one to make the pies, my aunt and grandma usually took care of the sweets, but the past couple of years I've started to take on that duty too. 

Recently, when Karo Corn Syrup and Fleischmann's Yeast sent me an invite to have a "Trouble-free Thanksgiving," I knew I needed to join them! I'm cooking Thanksgiving dinner at our house this year and I can use any help that I can get. Time savers, tricks, tools, I need it all!


Skillet Pecan Brownies

I love my cast iron skillet. I use it for everything from main meals to cornbread to breakfast to desserts. I cook with it on the stove top as well as in the oven. My skillet has never done me wrong.

I especially love making skillet desserts. Something about digging my spoon or fork straight into the pan and eating my dessert warm just really gets to me. These Skillet Pecan Brownies remind me of a fudgy cake that I can't stop eating. 


Cardamom Pecan Pound Cake

This deliciously tender pound cake is spicy-sweet in flavor and pairs perfectly with a cup of Chai tea!

I was feeling the need for some comfort food the other day and decided to bake a cake. This isn't just any ordinary cake though. It's a moist and tender pound cake. A pound cake filled with the warm flavor of cardamom and topped with crunchy pecans. And it totally made me feel better.

If you're not familiar with cardamom, it has a sweet but spicy taste and is used a lot in Middle Eastern cooking. A little goes a long way with this delicious spice, so you only need a small amount of the ground cardamom in this recipe. The taste is not overpowering at all in this cake, and even my kids loved it!

Carrot Banana Pecan Bread

I love banana bread. Seriously, I'm a self-professed banana bread junkie. During the fall and winter I definitely make a loaf every couple of weeks. I mean, what's not to love about it? 

First off, the scent of fresh baked bread in the kitchen is incredible. Breads with spices like cinnamon and nutmeg especially. It literally perfumes the entire house. A perfect time to bake is when you have company coming over. No candles needed, just the delicious aromas of banana bread wafting through the air.

Coconut Pecan Coffee Cake

I had some friends over the other day for a little coffee and treats party. Nothing fancy, just a get together to take a breather and catch up on life. We are all so busy, so much of the time, that we don’t often get the chance to talk, much less see each other.

I decided to make just a couple of treats to go along with our coffee, and what goes better with coffee than coffee cake? In my opinion, nothing! So I went to work creating something special for my friends.

The coffee cake I made was absolutely delicious. Using my secret ingredient, plain Greek yogurt, made the cake moist and tender. And the delicious coconut and pecan topping made it extra special. It was hands down the best coffee cake I've ever made!




Glazed Pumpkin Pecan Scones

'Tis the season for pumpkin. And we all know how much I LOVE pumpkin. I've been using it in my recipes for a few weeks now. Pumpkin pancakes, pumpkin spice lattes, pumpkin bars. You name it, I'm pumpkinizing it. 

Sorry, I know that's not a real word.

But it did sound kind of cool.

These pumpkin pecan scones are easy to make and are topped with a delicious pumpkiny glaze. They are perfect for breakfast with a cup of coffee, or even better, with a pumpkin spice latte. They also make a great dessert.
