I'm back on my breakfast kick again, but this time it's all about pancakes! It's no secret I love pancakes, and on the weekends I love making a batch of homemade pancakes {or waffles} for me and the boys. I usually make a double batch of whatever it is, then freeze the extra for the week ahead. There's nothing like having a homemade pancake or waffle during the week before work or school. It totally beats the ones from a box!

These Blueberry Buckwheat Pancakes are light, fluffy, and deliciously healthy. Buckwheat flour is a good source of protein and calcium, and it contains a significant amount of fiber. It has a nice nutty flavor which is perfect in these pancakes. I also made these pancakes lactose free.

I've been talking a lot about my goals for 2016 lately, and being healthier overall is at the top of that list. Like many of you, I'm busy with work, kids, laundry, cleaning house, etc., and I don't often take care of myself like I should. This is the year where I will focus on myself more and make my health a priority, too!

There are a few things I've jotted down in my journal that I am concentrating on so far. Small, simple things that I feel will make a big impact on my goals. I decided if I started with small changes, things I know I can achieve, then I would get the boost I'm needing. And by sharing the 5 simple steps with you, I will definitely feel more accountable!

Happy New Year, friends! I can't believe it's 2016! I hope everyone had a wonderful and relaxing holiday. We had a fabulous time, but it sure seemed to go by fast! 

With the new year comes resolutions. So many people vow to lose weight, and I've been in that boat year after year. But this year I decided I'm not going to focus on losing weight, instead I'm going to focus on being healthy. Eating healthier foods, trying to get more exercise, and taking more time for myself. Whether that means taking 30 minutes to read a book, or go for a walk, or even take a bubble bath. I want to be sure I'm taking care of myself.

Creamy Turkey Salad Pita Sandwiches

This quick and healthy creamy turkey salad uses your leftovers and makes a fabulous lunch!

Do you still have Thanksgiving leftovers in the frig? Specifically turkey? I do, and I'm always looking for new ways to use it up! I'm a big fan of doing the traditional thing and making open faced hot turkey and mashed potato sandwiches, but it's nice to come up with new recipes every so often.

I decided this year to make a delicious and creamy turkey salad, filled with fresh fruits, and put my salad into a pita. This would be great on top of lettuce to make lettuce cups, as well as on toasted bread. I love pita bread and it made an awesome vessel for my creamy turkey salad.


Roasted Cauliflower Soup with Sourdough Parmesan Croutons


I love all kinds of soups but find that I rarely make them homemade. I have a few favorite recipes that I created long ago that I make often, but other than those few I don't venture out to try new things at home.

A few weeks ago I got a beautiful head of cauliflower in my weekly organics delivery box. (I use Door to Door Organics here in Michigan and I LOVE it!) I rarely cook with cauliflower and honestly I wasn't quite sure what I was going to make at first.


Blueberry Breakfast Smoothie


One of my goals for 2014 has been to eat healthier. Since I love to bake I definitely eat my share of sweets, but I've been trying really hard to incorporate more fresh fruit and veggies into our diet and cut out processed foods. We eat a lot of salads in my house and I also make sure to pack things like carrot sticks and apple slices into my kids lunches. But that can get boring after time, and of course there are lots of other fun ways to get our intake up.
In the past I was one who skipped breakfast. I wasn't always hungry in the morning, and there wasn't always time to eat. Then I came up with this smoothie. This Blueberry Breakfast Smoothie is probably one of my favorite "healthy" breakfast treats.  The Greek yogurt fills you up and the flaxseed is good for your heart! This smoothie is sweet and delicious and keeps me satisfied until lunch.
The best part about this smoothie is how quick and easy it is to make. Just toss all of the ingredients into your blender and give it a whirl. You've got your breakfast in a glass in no time at all! And it's good on the go as well. So if you're pressed for time in the morning, make a batch of these smoothies and toss them in to-go cups, then you and your kids can have them handy in the car.
