I'm so excited to be a participant in the The Great Food Blogger Cookie Swap again this year! This is the fourth annual swap, but just the second year that I've been involved. Have you heard of the swap before? Food bloggers from all over sign up and receive the addresses of three other food bloggers, then send each of them one dozen delicious homemade cookies. The bloggers participating will receive three different boxes of cookies from other bloggers. Everyone then posts their cookie recipe on their blog!  

This year The Great Food Blogger Cookie Swap partnered with Cookies for Kids' Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer. By participating in this cookie swap we not only contribute to the food blogger community, but also to support a great cause.

About a month or so ago I received the names of the three bloggers I would baking for, and I got to work developing a new recipe just for this occasion. The result? A delicious Peanut Butter Sandwich Cookie with a Chocolate Hazelnut Filling. I mean, peanut butter and chocolate are great together, right? Yes, they go together perfectly! These cookies are amazing, and you definitely can't stop at just one.

I also received some pretty amazing cookies from some pretty amazing bloggers: Sara from Sensibly Sara sent a dozen delightfully soft Devil's Food Crinkle Cookies; Melissa from Cupcake Friday Project made the most delicious Snacktime Delight Cookies filled with potato chips, pretzels and chocolate chips; and Crystal from Mrs. Happy Homemaker sent some fabulous Cranberry Double Chocolate Chip Cookies! My boys and I really enjoyed all of the fantastic cookies we received.

Peanut Butter Sandwich Cookies with Chocolate Hazelnut Filling

Makes 3 dozen sandwich cookies

Ingredients:
1 1/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup peanut butter
1 stick unsalted butter, at room temperature
1 cup packed brown sugar
1 egg
2 tsp pure vanilla extract

For the filling:
3/4 cup chocolate hazelnut spread
3 Tbsp milk
3 Tbsp powdered sugar
Pinch of salt

Preheat the oven to 350 degrees. In a small bowl, whisk together the flour, baking soda and salt. In the bowl of a stand mixer, beat the peanut butter and butter on medium speed until blended.  Add  the brown sugar and beat until combined, scraping down the sides of the bowl as needed. Beat in the egg and vanilla, then add the flour mixture. 

Using a small scoop, scoop out the dough and roll each portion into a ball. Place the balls about an inch apart on a cookies sheet that is lined with parchment paper or a baking mat. Flatten the cookies by making crisscross marks using the tines of a fork dipped in granulated sugar.

Bake the cookies for 8-9 minutes or until the edges are lightly browned. Cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely. 

While the cookies are cooling, make the filling. Combine all of the ingredients in the bowl of a stand mixer and beat until well combined and smooth.

Spread the filling on the bottoms of half of the cookies, using about a teaspoon per cookie, then top with the remaining cookies, bottom sides down.
