Skillet Chocolate Chip Cookie

The other day it was cold and rainy outside and I wanted comfort food. Sweet comfort food to be exact. And I wanted to bake. Baking always warms me up and makes me happy.

So I decided to concoct a skillet chocolate chip cookie. I've made a skillet brownie before, but never a cookie. And it sounded so good! The perfect dessert for the boys and I to share.

So I made it....it was delicious...and the boys and I devoured it.

Ingredients:
3/4 cup unsalted butter, melted
1/2 cup light brown sugar
1 cup granulated sugar
2 eggs
1 Tbsp pure vanilla extract 
2 cups white whole wheat flour
3/4 tsp baking soda
1/4 tsp salt
1 cup semi-sweet chocolate chips

Preheat the oven to 350 degrees.

In a large bowl, combine the melted butter and both sugars and stir until smooth. Add in the eggs and vanilla and stir until everything is fully incorporated.

Stir in the flour, baking soda and salt and mix well. Gently fold in the chocolate chips.

Lightly butter a 10-inch cast iron skillet, then spread the dough evenly in the skillet.



Bake the cookie for 20-25 minutes until the edges start to turn a light brown. Be carefukl not to over bake! The center will seem under cooked but that's OK, you want it ooey gooey. 

Let the cookie cool on a wire rack for about 10 minutes, then scoop servings into a bowl. Serve with ice cream, if desired.
