Peeps Halloween Brownies

The kind people over at Peeps sponsored our Blogger Recipe Challenge group this month. All they asked in return is that we create a craft or recipe using their special Halloween Peeps. Each member of our group received the entire Halloween 2013 Peeps Collection, which consisted of ghosts, cats, pumpkins, chocolate covered Peeps and even sugar-free Peeps. Since each person in our group is so different, it will be fun to see what we all come up with and create. You can find all of our projects via the link at the bottom of this post.
Me being the baker, I knew I wanted to make a dessert and do something fun with my Peeps. So I took my favorite brownie recipe, turned it into a brownie "cake", frosted it, and topped it with cute Halloween Peeps.

This dessert would be perfect for a Halloween party or school function, or even just to make at home for your kids.

Peeps Halloween Brownies

Brownie Ingredients: 
2 cups sugar
1 cup butter, melted
2 tsp vanilla extract
2 eggs
1 cup all-purpose flour
3/4 cup unsweetened cocoa
3/4 tsp baking powder
1/2 tsp salt

Frosting Ingredients:
1/2 cup semisweet chocolate chips
1 Tbsp butter
1/4 cup water 
1 cup powdered sugar
1 tsp vanilla extract
Pinch of salt

Heat oven to 350°F. Coat a 9-inch round pan with cooking spray; set aside. 

First make the brownies. Whisk the sugar, melted butter and vanilla in a large bowl; whisk in the eggs, one at a time, until blended.

Whisk the flour, cocoa, baking powder and salt in a separate bowl. Slowly whisk the dry ingredients into the wet mixture until well combined. Spread in the prepared pan.

Bake 35 - 45 minutes or until a toothpick inserted in the center comes out clean but with some crumbs attached. Do not over bake! Cool completely on wire rack.

While the brownies are baking, make your frosting. Melt the chocolate, 1 tablespoon butter and water in medium saucepan over low heat, stirring occasionally. Remove from the heat and whisk in the powdered sugar until smooth, then add the vanilla and salt. Refrigerate until the frosting thickens slightly, about 30 minutes.

Once the brownies have cooled completely, remove the frosting from the refrigerator and give it a good stir. Spread it over the brownies. Add your Peeps in a circular pattern on top of the frosted brownies so that each slice you cut will include a Peep. Cut and serve.
