Spicy Pork Tenderloin Sandwiches {Meat Month}

I had a couple of pork tenderloins in my freezer and wanted to do something different with them. I've told you all before that my boys love eating things on buns, so I made a delicious spice rub for one of the tenderloins and decided to turn it into sandwiches. 

This is a very easy meal to make and is perfect for Fall. If you have a little extra time during the week this would be great for a weeknight meal but if not, it's lovely on the weekend for lunch or dinner while watching football.

Ingredients:
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp ground coriander
1 tsp  kosher salt
1/2 tsp cayenne pepper
1 to 1 1/2 lb. pork tenderloin
1 tablespoon olive oil
6 Bakery sandwich rolls
Spicy mustard (I chose Creole mustard but use whatever you like!)
Optional Condiments: Cheddar cheese slices, lettuce, tomato slices

Preheat the oven to 450 degrees F.

In a small bowl add all of the spices and stir with a fork until well combined. Sprinkle the rub over both sides of the tenderloin, one side at a time, pressing gently so the seasoning adheres to the meat.

In a large skillet over medium-high heat add the olive oil. Put the tenderloin in the pan and cook for about 5 minutes, until the tenderloin is seared and has a nice crisp skin. Repeat on the other side. 

Transfer the meat to a shallow roasting pan and bake for 20 minutes. Let stand for 5-10 minutes before you slice it. 

Spread some of the spicy mustard on both sides of a bun. Layer a few slices of pork, cheese, lettuce and tomato on the bottom bun, then top it with the other half of the bun. Repeat until all the sandwiches have been made and serve.
