Red Hot Shortbread Cookies

Happy Valentines Day! Are you doing anything special to celebrate? My parents are making the boys and I dinner so we'll be heading over there later tonight. My contribution is Valentine Brownie Bars for dessert. Yum!

Earlier this week I also made some fantastic strawberry cookies and mini heart shaped red hot shortbread cookies to give as gifts. The shortbread are absolutely amazing and I've been getting lots of compliments from my friends that they are delicious. 

So, since it's Valentines Day, I thought I would share the recipe with you in case you want to bake some up for your loves today! It's a very easy recipe and comes together in no time!

Red Hot Shortbread Cookies

Ingredients:


2 sticks unsalted butter, softened 
1/2 cup confectioner's sugar
1/2 teaspoon salt
2 1/4 cups flour 
6 Tbsp crushed cinammon imperials or red hot candies
1 tsp vanilla extract
Heavy cream
red sprinkles for garnishing, optional

Preheat oven to 300 degrees.

Using a standing mixer, or hand mixer, beat the butter and sugar together until light and fluffy. Add the salt, flour, and crushed candy and continue beating until everything is incorporated. Stir in the vanilla and 1 tsp of cream until a smooth dough forms. If needed, add just a bit more cream until the dough comes together. 

Transfer the dough to a lightly floured surface and roll out to your desired thickness. Cut out cookies with a heart shaped cookie cutter. (You can use any shapes here, it doesn't have to be a heart!) Top with red sprinkles, if desired. 

Bake larger cookies for approximately 25 minutes, smaller bite sized cookies for about 15 minutes. Just keep an eye on them!
