Chocolate Coconut Granola

A few weeks back I shared a picture of this chocolate coconut granola on my Facebook page and many of you asked for the recipe. Actually, quite a few people asked me to send them some! Ha! 

If you follow my Chef Next Door FB page then you know I was posting some of Bobby Flay's videos from his Fit series. This seven part series gave viewers tips on how to stay on track to leading a healthy lifestyle. 

In Episode three Bobby makes this granola and shares it with his buddy Michael Symon. On a total side note, I'm a humongous Symon fan. I watch, or record, The Chew every single day and haven't missed an episode yet.  I'm obsessed!

Anyway, you should really make this granola soon. It's crazy good, to the point where you can't stop eating it.

Is that a bad thing?

Chocolate Coconut Granola
Recipe adapted from Bobby Flay Fit

Ingredients:
1/4 cup plus 1 Tbsp coconut oil
1/3 cup cocoa powder 
1/4 cup honey
1/4 cup granulated sugar
Pinch of fine sea salt
1/8 tsp pure coconut extract
1/8 tsp pure vanilla extract
2 1/2 cups oats
1/2 cup raw whole almonds, coarsely chopped
1/2 cup coconut flakes (I used Bob's Red Mill)
1/4 cup milk chocolate chips
1/4 cup white chocolate chips

Make sure the baking rack is in the middle of the oven and preheat the oven to 275 degrees. Brush a half sheet pan with the tablespoon of coconut oil.

Heat the remaining 1/4 cup coconut oil over medium heat in a small saucepan. Whisk in the cocoa powder, honey, sugar and salt and bring to a simmer. Cook, whisking constantly until smooth and the sugar is completely melted. Stir in the coconut and vanilla extracts and keep warm.

Combine the oats, almonds and coconut flakes in a bowl. Add the cocoa mixture and mix until the oat mixture is completely coated with the cocoa mixture. Transfer the mixture to the prepared pan and press into an even layer. Bake for 50 minutes, then turn off the oven and let sit in the warm oven for 30 minutes longer. Remove to a baking rack and let cool.

In a large bowl, break the granola into pieces and toss together with both kinds of the chocolate chips.
