Spice Cake with Lemon Curd Filling

A moist and tender spice caked filled with a surprise of luscious lemon curd!

This month our Blogger Recipe Challenge group was fortunate enough to be sponsored by Love Cooking Company. They sent each of us a Mrs. Fields Fill N Flip Round Baking Pan and put us to work! This pan is like nothing I'd ever seen before. It's unique design leaves a spot in the center of the cake to add a filling, then the other half of the cake goes on top and covers it all up! Super cool if you ask me.

Since I spend a lot of time in the kitchen, whether it be cooking for my family or developing new recipes for the blog, I tend to make a mess. Yes, I admit it, I can be a messy cook at times!

One Pan Easy Beef Stroganoff

Just one pan, six ingredients, and 30 minutes and you've got a delicious and nutritious dinner on the table!

School started for my youngest son last week and the madness has begun! Since he plays football and has practice every day, I really need to make use of my time in the kitchen. By the time he gets home he is starving and isn't in the mood for me to make a complex, time intensive dinner. I can save those for the weekends!

I've always loved Beef Stroganoff, but my standard recipe for years has been in the slow cooker. I love my slow cooker and of course it's perfect for busy weeknights, but I wanted to come up with a lighter version of stroganoff that could be made in 30 minutes or less. And I did it!

Blueberry Crumb Muffins

Delightfully sweet, tender blueberry muffins with a crunchy crumb top!

Fresh blueberries are in full swing here in Michigan and they are one of my favorite fruits. Besides baking them in pies and muffins, I love to eat them plain by the handful or on top of my morning yogurt.

I was recently asked to sample some of the Tate & Lyle Sugars products and develop a new recipe or two. After I bought some blueberries a week or so ago, I knew that muffins were in my future. I whipped up a little crumb topping with the Tate & Lyle Organic Turbinado Raw Cane Sugar and the results were spectacular. I ended up with a sweet and tender muffin topped with a delicious crunchy topping. Perfect for breakfast or a snack, or any time of the day really. Who needs an excuse to eat a good muffin?
