Creamy Tomato Basil Soup

Just five ingredients and thirty minutes of time and you've got a warm, delicious meal for your family!

Growing up, tomato soup and grilled cheese was one of my favorite meals. I mean, what kid doesn't love that? I can remember dunking my sandwich into my soup, and I still do that today.

This creamy tomato basil soup is my take on the classic soup in a can, but kicked up a notch. It's smooth and creamy and the flavor from the basil is a perfect balance. Not too much, not too little.

I used crushed tomatoes instead of fresh tomatoes, reason being that in the winter it's sometimes difficult to get good fresh tomatoes. Want to know the best part? This soup requires just 5 ingredients and takes only 30 minutes to make, so it's a wonderful weeknight meal. Pair it with a grilled cheese or slices of toasted Italian bread and dinner is served!

2 Tbsp extra virgin olive oil
1/2 cup chopped onion
2 garlic cloves, minced
28 oz can San Marzano crushed tomatoes
3 cups water
6 large basil leaves, roughly chopped
1 cup heavy cream
Salt and pepper, to taste

Heat a large Dutch oven or soup pot over medium heat. Add the oil and once hot, add the onion and garlic. Saute until softened, about 10 minutes. Be sure to stir frequently so the garlic doesn't burn.

Add the crushed tomatoes and water and bring the mixture to a boil. Reduce heat to a simmer, add the basil, and cook for 20 minutes.

Carefully ladle the soup into a blender. Put the lid on but remove the center piece and cover with a clean washcloth or hand towel. Puree until smooth.

Add the soup back into the pot and add the cream and a pinch of salt and pepper. Heat through and taste for seasoning. Add more salt and pepper if needed.

Serve the soup with toasted Italian bread or a grilled cheese sandwich.

Bon Appetit!

French Onion Soup

Rich and flavorful French onion soup topped with crusty bread and nutty Gruyere cheese is the ultimate comfort food!

I've been in a soup mood lately. With the cooler weather, I just can't seem to get enough of it! I've been making a lot of homemade recipes, some that are classic oldies and others that are brand new. This French Onion Soup is one of those new ones. It's funny, I've never made it before at home, but it's probably one of my favorite soups!
